         Date Chocolate Chip Cookies

Chopped Dates

Cake flour
2 lbs 12 oz
 
 
Salt
1/2 oz
 
 
Baking Soda
1/2 oz
 
 
Brown Sugar, Light
1 lb 4 oz
 
 
Granulated Sugar
1 lb 4 oz
 
 
Butter
1 lb 10 oz
 
 
Whole Eggs

Vanilla
1 oz
 
 
Chocolate Chips
1 lb
 
 
 
Directions
 
1. Soak dates in hot water for 1 minute. Drain 15-20 minutes.
 
2. Blend flour, salt and baking soda. Set aside.
 
3. Place butter and sugar in 20 quart mixing bowl. Cream until light and fluffy.
 
4. Add eggs and vanilla. Mix until incorporated.
 
5. Mixing on slow speed, blend in dries.
 
6. Mix in conditioned dates and chips slowly.
 
7. Deposit about 3/4 oz. batter/cookie on parchment lined-baking sheets.
 
8. Bake 375degrees Fahrenheit for 7 to 9 minutes.
 
YIELD: 15-16 Dozen Cookies
